HOMEMADE FRUIT AND HONEY GRANOLA

Homemade granola is not only healthy, it is cheap to make and an opportunity to get creative. Use this recipe as a base line to create your own, just stick to the ratios of ingredients listed. NOTE: be sure to only use RAW seeds and nuts because the toasting process will over cook and burn them. ENJOY!

4 c old fashioned rolled oats ( not quick oats)
1 1/4 c seedless black raisins
2 c dried cranberries
1 1/2 c RAW unsalted sunflower seeds
2 c unsweetened unsulfered dried shredded coconut
3/4 c coconut oil warmed to liquid
1 c RAW honey
1 c warm water

Preheat your oven to 225F. In a large mixing bowl, mix all of the dried ingredients until well distributed. Add the warmed liquid coconut oil and mix until all is coated. Pour in the honey and mix until well distributed. Mix in the water and evenly distribute. Place a
on a large ungreased baking sheet and spread out to the sides. Stir gently every 30 minutes until light medium golden brown (about 1 1/2 hours or so). Remove from the oven and allow to completely cool, about 3 hours. Store in an air tight container. Use within 1 month or DRY pressure can into quart jars for 30 minutes at recommended factory pressure. Do not wet can!
